31. Ginseng and wheat turtle

Open the shell, remove the rough outer skin, remove the internal organs, head, and claws, clean thoroughly, and cut into small pieces. Wash the ginseng and ophiopogon japonicus. Place the ginseng, ophiopogon japonicus, ginger slices, scallion segments, salt, and cooking wine in a large bowl, add the turtle pieces, cover with the turtle shell, add chicken broth, and steam for about 1 hour. Add MSG and pepper to taste. Serve as a dish or snack.

32. Amber Walnuts

[Main Ingredients] 300g walnut kernels, 150g white sugar.

[Preparation] Soak walnut kernels in a basin of boiling water with a little salt for 10 minutes. Remove the walnut skins with a bamboo skewer, wash, and drain. Add a little water and sugar to a pot and simmer until the sugar syrup thickens. Add the walnut kernels and stir-fry until coated with the syrup. Clean the pot and heat sesame oil. When the oil is hot, add the syrup-coated walnut kernels and fry over low heat until golden brown. Remove, drain the oil, and let cool. Serve as a dish.

[Preparation] Wash and drain the Astragalus complanatus seeds and Cuscuta chinensis seeds. Kill the turtle alive, gut it, keeping the liver and eggs, remove the intestines and other internal organs, and cut it into large pieces. Heat vegetable oil in a pot over high heat, add ginger slices first, then add the turtle meat pieces and stir-fry for 5 minutes. Add a little cold water and simmer for another 5 minutes. Transfer to a clay pot. Place the Astragalus complanatus seeds and Cuscuta chinensis seeds in a gauze bag, tie the bag tightly, put it in the clay pot, add an appropriate amount of cold water, bring to a boil over high heat, then simmer over low heat for 60 minutes. Add salt and simmer for another 30 minutes. Drink the soup and eat the turtle meat.

8. Stewed Lamb Kidney with Cistanche deserticola

[Preparation] Split the sheep kidneys open, remove the white fascia and glands, and clean them thoroughly. Wash the Cistanche deserticola and slice it. Place the sheep kidneys and Cistanche deserticola together in a clay pot, add water, bring to a boil over high heat, then simmer over low heat for 20-30 minutes, or until the sheep kidneys are tender. Remove the Cistanche deserticola slices, and add appropriate amounts of ground pepper, MSG, and salt. Drink the soup and eat the sheep kidneys.
